Treat Your Valentine With Gluten Free Cake!!
The gluten-free diet isn't always easy. People allergic to gluten need to stick with the diet for life. That means giving away favorite treats like cake and cookies, as they are loaded with wheat flour. Here is the good news for the dieters, Celebrate this Valentine with our gluten free flourless Treat.
 
Preaparation Time - 30-40 min
Serves - 4 no.
 
Ingredients:
 
• 1 cup whole almonds, toasted 
• 3 Whole eggs, at room temperature (separated)
• 1/2 cup honey
• 1 teaspoon vanilla extract
• 1/2 teaspoon baking soda
• 1/2 teaspoon table salt
 
FOR TOPPING
 
• 2 tablespoons honey
• 1/4 cup sliced almonds
 
Method:
 
1. Preheat oven to 150º C. Coat the baking pan with dash of cutter and cover with butter paper.
2. Grind whole almonds in a food processor or blender until finely ground. Beat 3 egg yolks, 1/2 cup honey, vanilla, baking soda and salt in a large mixing bowl and mix until well combined. Add the ground almonds and beat slowly until combined.
3. Beat 3 egg whites in another large bowl with whisk until very foamy, white and doubled in volume, but not stiff enough to hold peaks. Using spatula, gently fold the egg whites into the almonds mixture until just combined. Put the batter into the prepared pan.
4. Bake the cake at 180º C until golden brown for about 20 minutes. Let cool in the pan for 10 minutes. Run a knife around the edge of the pan and gently remove the side ring. Let cool completely.
5. Carefully transfer the cake to a serving platter. To serve, drizzle the top of the cake with honey and sprinkle with sliced almonds.
