Stuffed Lauki
The good old lauki “bottle gourd” which neglected the most has both helping & cosmetic benefits that many people are unaware of. Lauki helps liver function in balanced function. It is very beneficial for jaundice, rich in vitamin, mineral, iron & magnesium it also helps improving overall health. 
Serving 4
For the lauki 
250 gm (approx) bottle gourd
½ tsp salt 
1 tsp oil
To be mixed into a filling
½ cup grated low fat paneer 
¼ cup finely chopped onions
1 tsp ginger green chili paste
2 tsp chopped coriander
½ tsp dried mango powder
½ tsp coriander
 ½ tsp chili powder
1 tbsp chopped mixed dry fruits
1 tsp corn flour
Salt to taste
For the gravy 
3 medium tomato, pureed
1 small stick cinnamon
1 tsp ginger-green chili
1 tsp 
1tsp coriander powder
2tsp chili powder
½ tsp garam masala
1 tsp sugar
2 tsp oil
salt to taste
 For the garnish
2 tbsp chopped coriander
 How to prepare 
For the lauki 
Peel the white pumpkin, place it in a pressure cooker with 1 cup of water and salt Pressure cook for 1 whistle and cool.
Scoop out the inside pulp, discard it and keep the scooped white pumpkin aside.
Stuff the scooped out white pumpkin shell with the filling mixture and keep aside.
Heat the oil in a non-stick pan and shallow fry the stuffed pumpkin till brown spots appear on all the sides. Remove and keep aside. 
For the gravy
Heat the oil in one-stick pan, add the cinnamon and cloves and fry for 1 minute.
Add the tomato puree, ginger-green chili paste, coriander powder, red chili powder, garam masala, sugar and salt and stir continuously till the mixture leaves oil from the sides.
Add ¼ cup of water and bring to a boil. Keep aside.
How to make? 
For serving, cut the stuffed white pumpkin into thick slices and place them on a serving dish.
Pour the hot gravy over the stuffed white pumpkin slices.
Serve hot garnished with coriander
