Pumpkin Soup
Pumpkin is an often overlooked source of fiber. It is very rich in beta-carotene which is very beneficial for eyes. It also lowers LDL from the body. It also keeps skin wrinkle free.
Serving 4
600g  pumpkin, diced
250 g potato
2 medium onions
3 chicken stock cubes, crumbled 
3 ½ cups water
250 ml thickened cream
Salt to taste 
How to prepare
Place all ingredients, except cream in a large saucepan 
Simmer until vegetables are tender
Remove from heat
Blend with a stick blender until smooth
Add cream and stir through 
Season to taste

Protein -8 g 
Carbs – 10 g
Fat – 5 g
