Pineapple Pastry
One of the nutritious and popular fruit pineapple or “ananas” has an integrity history to narrate.  Fresh pineapple is low in calories. Its flesh contains no cholesterol, no saturated fats however. It is a rich source of soluble and insoluble source of fiber like pectin. It is also an excellent source of vitamin c, regular consumption of foods rich in vitamin C helps the body protect from scurvy.
 
Serving 4 
 
Ingredients 
 
2-3 cups of all purpose flour
1 ½  cups granulated sugar
2 tbsp baking soda
1 cup desiccated sugar coconut
2 eggs, lightly beaten
1to 2 tsp vanilla extract
1 2o ounce crushed pineapple
For frosting 
3 cups powdered extract
1 tsp vanilla powder 
¼ cup non fat milk
                               
Method 
 
Preheat oven to 350 degree.
Coat a 9х3 inch baking pan with nonstick cooking spray.
Combine flour, sugar, baking soda and coconut (if prefer).
Add eggs, vanilla & stir it again & stir in crushed pineapple.
Pour into prepared cake pan & bake for 30 to 40 minutes until a toothpick inserted in the middle comes out clean.
 
For frosting –
 
Mix vanilla, milk, sugar in a bowl to desired consistency. Add more sugar or milk if required. If you want coconut flavor add coconut extract for the vanilla, and sprinkle some desiccated coconut on top.
