Carrots exceptionally rich in beta –carotenes. Carotenes are mainly those compounds which are converted into vitamin a in the liver. So they are very good for vision. carrots are also rich in fiber. They are very beneficial for health especially for constipation

Similarly peas are a good source of protein in a vegetarian diet. It also gives variety to the food. Vitamin C present in it improves immunity.

Ingredients

8 brown breads slices lightly buttered

½ cups parboiled and finely chopped carrots

¼ cup of green peas boiled and slightly mashed

  2 tbsp grated paneer (cottage cheese)

½ tbsp cumin seeds

½ tbsp finely chopped green chilies

2 tbsp chopped coriander

How to Prepare

  • Heat the oil and fry  cumin seeds until they crackle. Add green chili, vegetables, paneer and salt to taste.
  • Cook it for 2-3 minutes.
  • Spread the mixture on 2 bread slices evenly. Cover it with remaining 2 bread slices.
  • Cut into 2 and serve hot.
